1 c. Pamela’s Pancake & Baking Mix
1/4 c. White Rice Flour
2/3 c. Bob’s Red Mill All-Purpose GF Flour
1 packet Truvia (a stevia sweetener)
1/2 tsp. salt
2 1/2 tbsp. melted butter
2 large eggs
1/4 c. water or milk
olive oil (to wipe on the skillet before you cook)
Mix first 5 ingredients together in a bowl – make sure they are mixed very well. Then – melt your butter – and add to the dry mixture. Some of it will ball up – that’s fine. Add your eggs and other liquid. Mix it all together well and it will begin to clump together as one ball. Let set for about 10 minutes.
Now the fun part.
Heat a large skillet (thick – like cast iron or calphalon etc…) – medium high heat.
Grab about 3 to 4 tbsp of dough and press together well into a ball. Then – lightly flour (with rice flour) your rolling/pressing surface. I liked the way mine turned out kind of rustic – so I used a glass cutting board and pressed the dough out into a rough circle – flipped it – dusted with more rice flour – pressed again – you get it – until it was relatively thin (like gordita thickness).
When ready – use a paper towel and pour some olive oil on it – use it to just lightly oil the pan by brushing it. Now use a spatula to help you transfer the dough to the pan (it can be a little fragile). Cook on one side for about a minute or so – flip over – it might begin to break up – that’s ok….again, we’re going for rustic. You can flip back and forth to get the golden/brown spots on both sides as desired - about 3-5 minutes – until cooked through (it won’t take too long). Be sure to repeat the wiping of the pan with olive oil before each round.
Once they’re finished – you can break it up into the size pieces you want and serve. It’ll keep for a day or two in a ziploc bag – probably a little longer in the fridge. Just be sure to put a paper towel in there keep any moisture from building.
***NOTE: If you want these more uniform like crackers – you can make them in whatever shape you’d like and cook the same way in the pan.
Optional: Seasonings of your choice if you want yours flavored. They are great just plain – but if you want some extra seasoning – you can add some to the mix!
